First introduced during the EPCOT International Food & Wine Festival, the soup quickly became a staple on the restaurant’s menu due to its rich, comforting flavors.

Ingredients

– 4 slices of thick-cut bacon, diced
– 1 small white onion, finely chopped
– 2 celery stalks, finely chopped
– 3 tbsp all-purpose flour
– 3 cups chicken stock
– 2 cups whole milk
– 12 oz Canadian sharp Cheddar cheese, shredded
– 1/2 cup Canadian lager (or any light beer)
– 1 tbsp Worcestershire sauce
– 1/2 tsp ground white pepper
– 1/4 tsp smoked paprika
– 2 tbsp unsalted butter
– Chives, for garnish

Instructions

Directions
1. Cook the Bacon:
In a large Dutch oven or heavy pot, cook diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the drippings in the pot.

1. Sauté Aromatics:
Add chopped onion and celery to the bacon fat. Cook for 5–6 minutes until softened and fragrant.

1. Create a Roux:
Stir in the butter and flour, cooking for 2 minutes to form a roux. This will help thicken the soup.

1. Add Liquids:
Slowly whisk in the chicken stock and milk, stirring constantly to avoid lumps. Bring to a gentle simmer.

1. Incorporate Beer and Seasonings:
Pour in the Canadian lager, Worcestershire sauce, white pepper, and smoked paprika. Simmer for 15 minutes, stirring occasionally.

1. Add Cheese:
Reduce heat to low and add shredded Cheddar cheese a handful at a time, stirring until melted and smooth.

1. Finish and Serve:
Stir in the crispy bacon, reserving some for garnish. Serve hot, topped with fresh chives and a sprinkle of bacon.
