Bread pudding has long been a signature finale at ‘Ohana, the family-style restaurant inside Disney’s Polynesian Village Resort. The restaurant’s version is known for pairing warm bread pudding with banana-caramel sauce and vanilla ice cream. This home-kitchen adaptation keeps that familiar contrast while using ingredients and equipment most cooks already have.

Ingredients

For the bread pudding

  • 10 cups day-old challah or Hawaiian sweet bread, cut into 1-inch cubes
  • 5 large eggs
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon fine salt
  • 2 tablespoons unsalted butter, softened, for the baking dish

For the bananas foster sauce

  • 8 tablespoons unsalted butter
  • 3/4 cup packed dark brown sugar
  • 1/3 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt
  • 3 ripe but firm bananas, sliced
  • 1/2 cup chopped toasted pecans, optional

For serving

  • Vanilla ice cream

Instructions

  1. Heat the oven to 325°F. Butter a 9-by-13-inch baking dish.
  2. Spread the bread cubes on a sheet pan. Toast for 8 to 10 minutes, then let cool slightly.
  3. Whisk together the eggs, milk, cream, sugar, vanilla, cinnamon, nutmeg, and salt.
  4. Place the bread in the prepared dish. Pour the custard over it, press gently so the cubes absorb the liquid, and let soak for 20 minutes.
  5. Bake for 50 to 60 minutes, until the edges are set and golden and the center is slightly soft but no longer liquid. Rest for 10 minutes.
  6. For the sauce, melt the butter in a saucepan over medium heat. Whisk in the brown sugar and cook for 2 minutes. Add the cream, cinnamon, and salt, then simmer for 3 to 4 minutes.
  7. Remove from the heat and stir in the vanilla. Fold in the bananas and warm gently for 1 to 2 minutes without breaking them apart. Add pecans, if using.
  8. Serve the warm bread pudding with vanilla ice cream and spoon the bananas foster sauce over the top.

Cook’s note: Day-old bread absorbs the custard best. If your bread is fresh, toast it a few minutes longer before assembling the pudding.
