Instructions
Directions
- Make the slaw: In a large bowl, whisk together the vinegar, sugar, mayonnaise and salt. Add the cabbage and toss to coat. Refrigerate while you cook the meat so the slaw softens slightly and turns tangy.
- Make the peppercorn sauce: Stir together the sour cream, mayonnaise, cracked pepper, lemon juice, Dijon, garlic and salt. Taste, adjust the pepper to your liking and refrigerate until ready to serve.
- Roast the pork: Heat the oven to 400°F. Mix the olive oil with the paprika, garlic powder, onion powder, cumin, salt, black pepper and cayenne, then rub the mixture all over the pork loin. Place on a rack set in a baking pan.
- Roast for 25 to 35 minutes, until a thermometer in the thickest part reads 145°F. Rest the pork for 10 minutes before slicing.
- Cook the sausage: While the pork rests, grill or pan-sear the sausages over medium heat, turning often, until browned and cooked through to 160°F, about 10 to 12 minutes. Slice into thick coins or halve lengthwise.
- Slice the rested pork as thinly as you can against the grain.
- Assemble: Spread a generous spoonful of peppercorn sauce down the center of each warm pita. Layer on sliced pork and sausage, top with slaw (and pickled red onions if using), then drizzle with a little more sauce.
- Fold in the sides, roll the pita tightly into a wrap and serve right away, ideally with the paper wrapper twisted around the bottom for the full Galaxy’s Edge experience.
